- 1 tsp Lemon juice
- 1 tsp 1/2 Corn Starch
- 6 Egg white
- 1 1/3 cup Granule sugar
- 2 tsp Vanilla extract
- Kosher salt pinch

- Preheat the oven to 200°F and adjust the rack to the third position below.
- Use a pencil to track 8-inch or 9-inch cake pans on a parchment-lined baking sheet to form circles.
- With a stand mixer, beat the egg whites at low speed until a foamy foam forms. The egg whites will be beating until a soft peak forms, increasing the speed to medium speed. very Gradually drain the sugar with the blender still in medium size.
- Meanwhile, mix the lemon juice and cornstarch in a small bowl. When the egg whites reach a hard peak, add the lemon juice and cornstarch mixture, then add the vanilla and salt.
- Shake at high speed for 5 minutes until the meringue is hard and shiny.
- Spoon the meringue over parchment paper into a tall circle inside the traced stencil. Create a small divot in the center of the meringue and use a spoon to shape the sides of the Pavlova into rather swirls.
