My local farmers market opened up this week, and I was excited, to say the least. Maybe it’s because we’ve been avoiding everything for the past year (or more) or maybe it’s because warmer weather is finally bringing life back to normal. Either way, from the moment I saw the green tented food stalls lining my local park, I started thinking about delicious, produce-filled farmer’s market recipes.
As a mostly plant-based eater (at least I try to!), I love farmers markets (and supporting small family farms and sustainable practices, incidentally!). This week when I shopped, I focused on seasonal veggies like asparagus, artichokes, and spinach (i.e., green veggies in general), as well as sweet veggies like cherries, blueberries, and rhubarb.
Inspired by this produce, here are five easy spring farmers market recipes to add to your recipe list.
1. Almond and arugula pesto bowl

I’m a huge fan of bowls. While I was working from home last year, I would spend my lunch breaks creating the perfect combination of grains, veggies, and toppings to make bowls that were both nutritious and delicious (that’s key!).
