Here’s another one of our favorite “breakfast and dinner” recipes. My whole family loves this French Toast Casserole. Take it up a notch with the crunchy cinnamon topping! We eat it plain or with syrup, but toppings like whipped cream and berries are also delicious.

- 2 teaspoons cinnamon (Aldi – $1.09 for 4.6 tablespoons) — $0.16
- 1/2 teaspoon salt
- 1 tablespoon vanilla (Aldi – $3.85 for 2 fl oz) — $0.96
Streusel topping:
- 3 tablespoons brown sugar (Aldi – $1.95 for 2 pounds) — $0.08
- 3 tablespoons sugar (Aldi – $3.09 for 4 pounds) — $0.09
- 1 teaspoon cinnamon (Aldi – $1.09 for 4.6 tablespoons) — $0.08
- 1/4 teaspoon nutmeg
- 2 tablespoons cold butter (Aldi – $0.85 per stick) — $0.22
French toast bake total: $5.33 (serves 6 or more)
Baked scrambled eggs:
- 12 large eggs (Publix – $1.50 per dozen) — $1.50
- 1 1/4 cups whole milk (Aldi – $3.33 per gallon) — $0.26
- 4 tablespoons melted and cooled butter (Aldi – $0.85 per stick) — $0.43
- 3/4 teaspoon salt
- pepper, for garnishing
- Fresh herbs for garnish, if desired
Total Baked Scrambled Eggs: $2.19 (serves 6)
Served with blueberries:
- Blueberries (Sawyer’s Produce – $1.25 for 18 oz.) — $1.25

How to make French toast casserole and baked scrambled eggs:
- Follow the instructions the night before here (or as directed in the recipe card below) Prepare the casserole and streusel topping. Wrap both tightly in plastic wrap and store in the refrigerator.

Instructions
How to make French toast casserole:

Grease a 9-by-13-inch baking dish. Cut the bread into 1cm cubes and place in the mold.

Whisk the eggs in a large mixing bowl. Add cream, milk, brown sugar, cinnamon, salt, and vanilla and mix well. Pour this mixture evenly over the bread cubes. Spread the cubes and liquid in an even layer in the pan. Refrigerate overnight.

To make the streusel topping, combine sugar, cinnamon, and nutmeg in a bowl. Add the cold butter and mix with a pastry blender or by hand until crumbly. Cover and refrigerate toppings separately until ready to use.

After the casserole has set overnight (or at least 8 hours), preheat the oven to 350 degrees F. Uncover the French toast casserole pan and sprinkle the toppings evenly over the top. Bake for 45-50 minutes or until the top is golden brown and the casserole is set.
How to make baked scrambled eggs:

Coat another 9×13 glass baking dish with nonstick cooking spray.

In a large bowl, combine all ingredients and mix well until the mixture is well incorporated, light, airy, and pale in color. Pour into the prepared glass baking dish.

Transfer to the preheated oven and bake uncovered for 15 minutes. (It’s baked at the same temperature as the French toast casserole, so you can bake it at the same time!)

After 15 minutes, stir while pushing in the outer edges of the egg, as the edges will cook faster. Bake for another 10 minutes or until set (time will vary depending on your oven; the eggs will set quickly towards the end, so keep an eye on them to make sure they don’t overcook and become dry).

The eggs will continue to cook after you remove them from the oven, so remove them from the heat when they still look slightly moist.

Garnish the eggs with freshly ground pepper and chopped fresh chives.

Let the French toast casserole cool for at least 10 minutes before serving. Serve with French toast casserole, baked scrambled eggs, and blueberries.
