My kids should look forward to lunch, and I know it’s hard because I always feel like I’m running out of ideas. I wish I could deliver a hot lunch every day, but that’s not possible, so I pack it in a thermos.

1. Meatballs and rice

All kids love spaghetti and you can also spice up the recipe by adding different toppings to the noodles. This is a pretty easy recipe and adding veggies, ground beef, chicken or turkey makes it even more delicious and fun.
3. Chile
Hearty chili is perfect to take to school as leftovers for dinner – veggies and meat are great substitutions too.
4. Layered Tacos
To make a lunch for one, you’ll need soft or hard tortilla chips, cheese, and taco meat, and you can also store a small container of chopped lettuce and salsa.
5. Pancakes
Breakfast for lunch! Such a fun concept. Don’t forget to add a container of syrup and a little fruit on the side.
