And when it starts to feel like more of a chore than a pleasure, you know it’s time to shake things up with some simple but punchy flavors that will make even the most mundane Wednesday feel like a special night. Try this sun-dried tomato caper pasta.
As someone who prioritizes protein daily, sometimes the only way to get out of a rut is to eat something that doesn’t focus on your daily protein goals. Please call me whatever name you like, such as Women’s Dinner. This recipe takes spaghetti to a whole new level.

dried tomato pasta ingredients
The ingredient list is simple, but every element pulls its weight, adding flavor and balance in a 100% addictive way.
pasta. I prefer spaghetti or bucatini, but you can make it any way you like.
Sun-dried tomatoes. Let’s soak it in oil. Use both tomatoes and oil for extra flavor.
shallot. Since it is thinly sliced, it has a slightly sweet taste.
tomato paste. The rich flavor and subtle sweetness give the sauce depth.
Garlic. Measure it with your heart.
capers. Coarsely chopping adds a flavorful, tangy punch that really makes this recipe delicious.
Rich cream. The richness and fat balance the whole dish. Add vegetable milk if desired.
Parmesan. Just add a little grated Parmesan cheese for a salty, cheesy flavor.
basil. Gives a refreshing finish.

This pasta recipe is very simple, but there are a few things you can do to help ensure the best results.
- To get the most flavor from tomato paste, cook it with shallots until slightly blackened. This really caramelizes the flavor and takes away some of the raw tomato flavor.
- Leave the cream outside while you prepare everything and reduce the heat before adding it to the pot. If you add cold cream to a hot skillet, it may curdle, so bring it to room temperature and lower the heat to get a smoother sauce.
- Reserve the pasta water. Don’t drain the pasta without reserving some of the water, as the pasta water will cause the sauce to clump together and stick to the pasta noodles.

- 2 your favorite pasta
- 2 – 3 tablespoons of oil from a jar of sun-dried tomatoes
- 1 large shallot, thinly sliced
- 3 tablespoons tomato paste
- 1/2 teaspoon Red pepper flakes (according to taste)
- 5 – 6 sun-dried tomatoes, finely chopped
- 3 Finely chopped large garlic clove
- 2 A heaped tablespoon of capers (coarsely chopped)
- 1/4 cup fresh cream
- 1 tablespoon grated parmesan cheese
- garnished with basil
- Prepare pasta according to box instructions. While the pasta is cooking, make the sauce.
- In a large stovetop pan, add the oil from the jar of sun-dried tomatoes and heat over medium heat. Add a pinch of salt to the shallots and cook for 2 minutes, until they begin to soften. Add the tomato paste and red pepper flakes and cook, stirring occasionally, until it begins to darken. Stir in the chopped sun-dried tomatoes, garlic, and capers. Cook for another minute to let the flavors meld, then reduce the heat. Add the cream and Parmesan to the pan and stir until smooth.
- Add the pasta to the pot along with the pasta water and stir until the sauce is smooth.
- Serve hot, garnished with basil. enjoy!
