- Preheat oven to 400 degrees. Cut the zucchini into quarters lengthwise, then in half crosswise. (If using baby zucchini, cut it in half lengthwise.)
- Peel the garlic and roughly chop it,Slice the eel and shallot into rounds. Cut the lemon into thin rounds.
- In a medium bowl, combine zucchini, cherry tomatoes, garlic, shallots, lemon, and thyme. Pour in about 1/4 cup of olive oil and season generously with salt and pepper. Mix together and pour onto a foil-lined baking sheet.
- Bake for 15 minutes, then remove from the oven and turn the broiler on.
- Combine balsamic and honey in a small bowl.
- Place the salmon fillets among the vegetables, drizzle with olive oil and season well with salt and pepper.
- Bake for 3 minutes, then brush with the balsamic-honey mixture and pour more over and around the vegetables. Cook for an additional 2 to 3 minutes until the salmon is done to your liking.
- Remove from the oven and garnish with fresh basil. Eat and enjoy!
