I bought 4 avocados. Two are rock hard and two are fully ripe. Will everything go in the fridge? Wouldn’t you do that? The answer will vary. Knowing which goes where can mean the difference between getting the perfectly ripe avocado you want and having a counter full of mushy avocados.
Do avocados need to be refrigerated?
Simply put, it depends entirely on ripeness. Immature avocados ripen best at room temperature. If you want to delay ripening, you can also put it in the refrigerator to slow down the ripening process. Ripe avocados do not need to be refrigerated, but they benefit from doing so. Cut avocados must be refrigerated.
Once cut, avocados must be refrigerated within 2 hours. The USDA’s two-hour room temperature rule applies to all cut produce. After cutting, brush all exposed flesh with lemon or lime juice before refrigerating. This acid slows down the enzymatic browning reaction that turns avocado flesh brown and also provides mild antimicrobial protection.
If you cut an avocado in half, leave the seed intact, brush with lemon juice, press plastic wrap directly onto the cut end, then seal. Please use up within 1-2 days. For diced or sliced avocados, transfer to an airtight container, squeeze lemon juice over the top, seal tightly to minimize air, and store in the refrigerator. Use within 3-4 days according to the National Center for Home Food Preservation. If you have maxed out avocados, don’t waste them and use them the same day for things like tuna tostadas or Baja fish tacos.
Submersion hack: What not to do
The hack that went viral on TikTok, which involves soaking avocados in the refrigerator and storing them in the refrigerator, is one of the things the FDA has specifically warned about. A study by FDA scientists found that Listeria monocytogenes can move from the avocado skin to the pulp when soaked in cold water. This is important because cleaning or disinfecting the skin surface before cutting will not remove contamination that has already entered the interior. “FDA does not recommend this practice,” an FDA spokesperson said.
Additionally, submersion technology is solving problems with better solutions. Lemon juice and sealed storage effectively slow browning without posing a food safety risk. Stick to those methods.
