It may be a cliché, but as soon as September rolls around, I can’t wait to start making soup. Sure, it may not be that cold yet, but every time I make soup, it brings back memories of this season (plus, on warmer days, we have gazpacho, right?).
While fall soup recipes are my go-to, I’m always looking to refresh them (and with what’s happened this year, I felt a refresh was definitely needed!) So I scoured the internet to find a few to add to my rotation this season and today I’m sharing my favorite options with you all. So, let’s get started, because they’re all comforting and reassuring.
Here are some delicious and easy fall soup recipes that are comforting.
1. Easy French Onion Soup
This old-fashioned soup always seems like a delicious option, and this recipe in particular has two *secret* ingredients underneath the bubbly layer of melted cheese (which I love so much) that make this soup really delicious. Click the link below to find out what I mean:
2. Creamy Roasted Cauliflower and Mushroom Soup
My love for mushrooms didn’t come until much later in life (and I’m so glad I did!) and the creamy texture and nutritious ingredients of this vegan, gluten-free soup are one of the reasons why. I’ll definitely be making this when the chilly days arrive.
3. Soba soup with shrimp and vegetables
Speaking of things I’ve grown to love later in life, soba noodles are on that list too. I love soba noodles because they’re easy to slurp, especially when they’re dipped in a flavorful, delicious broth. With the cold season coming up, I think soba noodles are the perfect antidote.
4. Chicken and Lemon Herb Dumpling Soup
My grandmother would make a variation of this recipe for me when I would visit her on winter days; in fact, just looking at this recipe, you can practically taste the familiar herbal goodness that explodes in your mouth. I love this variation for both its flexibility (you can adjust it depending on what you have on hand) and its budget-friendly ingredients list; so for me, this is killing it all!
5. Three-bean chili
Chili is a must during soup season, and thanks to my favorite Cello cheese (this cheese is so rich and delicious), it’s the perfect comfort food to ring in the new season (and maybe even catch a football game or two).
6. Orzo and chickpeas with turmeric and ginger soup
I’m always on the lookout for recipes that incorporate chickpeas, my favorite source of plant-based protein, and as soon as I saw this dish that also features my favorite spices, ginger and turmeric, I knew it had to be on my list.
7. Soup Seafood Chowder
Seafood lovers, rejoice! This dish is filled with homemade broth and is the perfect soup to transition from summer to fall.
8. Instant Pot Sweet Potato Tortilla Soup
Finally, a colorful and flavorful vegetarian recipe. Loaded with sweet potatoes, roasted tomatoes, and corn, this recipe is hearty and high in fiber. Best of all, it can be made in just minutes using that holy grail of kitchen appliances, your Instant Pot. (Oh no! Don’t have an Instant Pot? Don’t worry, you can make it on the stovetop too!)
