We sometimes call this recipe “Mexican Lasagna,” “Taco Bake,” or “Taco Pie,” depending on how we’re feeling that night. It’s a very simple recipe, so if you can buy tortillas and salsa cheaply, you’ll definitely want to make it.

I used ground turkey. That’s because it’s the cheapest thing you can get these days. However, you can use ground beef or chicken instead. I also added about 1 cup of leftover rice to add bulk, but you can also leave out the rice or add a can of corn (or a can of beans) instead.

If you like sour cream or black olives, add them on top after baking for a great garnish. Sadly, my family won’t touch any of these great additions. I served sautéed green beans on the side to keep this meal frugal, but there are many side dish possibilities that would work well with this main dish.

1 8-count bag of 8-inch tortillas (Publix) —$0.86

1 tablespoon olive oil (Aldi – $7.25 for 33 tablespoons) —$0.22

1 small onion, finely chopped (Aldi) —$0.20

1 pound ground turkey, cooked (Aldi) —$2.45

2 tablespoons chili powder and 2 teaspoons cumin (Aldi) —$0.25

Salty as you like

1 cup salsa (Aldi – $1.99 for 2 1/2 cups) —$0.80

1 can chili beans (or black beans) (Aldi) —$0.85

1-2 cups leftover cooked rice (or canned corn or extra canned beans) (Aldi – $1.99 for 7 1/2 cups dry) —$0.13

1 8 oz package of cheddar cheese, shredded (Aldi) —$1.65

Chopped coriander for garnish (Aldi) —$0.25

Mexican lasagna total: $7.66 (serves 6-8)

Ingredients for sautéed green beans:

2 cans of drained green beans (Aldi) —$1.18

3 tablespoons butter (Aldi – $2.89 per pound) —$0.27

Garlic powder, salt and pepper to taste

Total sautéed green beans: $1.45 (serves 6)

Dinner total: $9.11 (for 6 people)

How to make Mexican Lasagna and Sauteed Green Beans:

  1. Preheat oven to 425 degrees. Spray a 9×13 pot with cooking spray.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the finely chopped onion and stir until it starts to brown. Stir in cooked ground turkey, 2 tablespoons chili powder, cumin, salsa, beans, and 2 teaspoons cooked rice. Add salt to taste. Continue cooking and stirring for another minute or two until heated through.

3. Cut the tortilla in half and stack the halves in a 9×13 pan.

Make a homemade taco bake by layering flour tortillas in the bottom of a white casserole dish.

4. Top with half of the meat mixture and half of the shredded cheese. Repeat each layer.

No-bake taco pies are layered in a casserole dish and covered with shredded cheddar cheese.

4. Bake at 425 degrees for 15-20 minutes (remove from oven and let stand 20 minutes before cutting). Garnish with cilantro (or sour cream and black olives if you like).

5. While the taco pie is baking in the oven, melt 3 tablespoons of butter in a skillet over medium-high heat. Add 2 cans of green beans and mix. Add garlic powder, salt, and pepper to taste. Continue to stir-fry until the green beans begin to brown.

Boil the cooked green beans in a frying pan with the butter sauce.

6. Serve green beans with Mexican lasagna.

Depending on how I’m feeling that night, I sometimes call this recipe “Mexican Lasagna” or “Taco Pie.” It’s a very simple recipe, so I always like to make it with tortillas and salsa whenever I can find it cheap, and my whole family loves it. Add your favorite toppings and sides. However, to keep this meal frugal, I made sautéed green beans.
