This cottage cheese pancake recipe is very easy. packed With protein! These pancakes are similar to crepes and are perfect for a variety of fillings and toppings. There are only 6 basic ingredients and I always have them all on hand.

my children love This pancake. In fact, they are often requested for birthday breakfast. They sometimes eat these plain as a grab-and-go breakfast on the way to school.

I like how easy it is. Just throw everything in the blender and you’re done. Also, pouring the batter from the mixer onto the griddle is genius. Much easier than using a mixing bowl.

So if you’re trying to get more protein into your diet, but also want to “feel” like you’re eating carbs, this recipe is for you. This is a recipe that is often requested at our house. We hope you like it as much as we do!

Ingredients such as eggs, cottage cheese, flour, milk and oil are placed along with measuring tools.

Ingredients for cottage cheese protein pancakes

  • 9 eggs
  • 3 cups cottage cheese
  • 1 cup flour
  • 6 tablespoons oil
  • 3/8 teaspoon salt
  • 6 tablespoons sugar

Bake 18 pancakes

Stack lightly browned cottage cheese protein pancakes on a plate in soft, fluffy layers.

How to make high-protein pancakes using cottage cheese

  1. Grease an electric frying pan or pancake grill with oil and heat over medium heat.
  2. Combine all ingredients in a blender.
Add the egg powder and cottage cheese to a blender before mixing into the dough.

3. Mix until well combined.

Blender with smooth pancake batter on kitchen counter next to ingredients. The blended mixture shows how cottage cheese pancake dough is made quickly.

4. Pour the batter onto the hot griddle. When bubbles appear, flip it over and cook the other side.

Bake the pancake batter 4 times on a flat griddle, creating bubbles on the surface.

5. Serve warm with butter and syrup or your favorite toppings.
