For me, the official start of summer is always marked by my first taste of the season’s perfect fruit. A super sweet and floral watermelon, my first flavorful heirloom tomato, and of course the first bite of a perfectly juicy peach. Summer is all about embracing and celebrating the flavor of produce for what it is, without just adding embellishments. My approach to desserts takes a similar approach, finding ways to enjoy the flavor of the produce without adding much. Since we’ve already experienced quite the heatwave, I’m all about sweet treats that don’t require turning on the oven. Serve with shaved frozen peaches and cream.
I’m a big fan of the shaved frozen fruit trend and have enjoyed trying many varieties throughout the season. Shaved watermelon with just a pinch of salt and chili, shaved honeydew with a squeeze of honey, and these shaved peaches with vanilla cardamom cream are probably my newest obsession. Think of the joy of peach cobbler without the hassle.

Here’s what you’ll need for frozen peach shavings and cream:
The ingredient list here is simple and short, so use it as a starting point and substitute with your own additions.
- peach. Choose your favorite variety according to the season.
- Rich whipped cream. This is the base for our desserts.
- cardamom. Fresh land is the only way.
- vanilla bean powder. Or add vanilla essence if you like.
- salt. Be sure to use a generous pinch here.
- Powdered sugar. Just a little bit to bring it all together.
- Biscuit. Think shortbread, almond cookies, biscotti, or whatever version you like.

How to make this frozen dessert
Obviously this is a simple dessert, but there are some strategies to achieve the best results.
- Freeze the fruit overnight. To obtain light and fluffy shavings, the fruit must be completely frozen and hardened.
- Do not over-whip the cream. I like to keep the whipped cream roughly similar in texture to slightly melted ice cream. If the corners are a little too stiff, add more cream to the mixing bowl and fold in until soft.
- Fresh fruit brings everything together. Yes, I use frozen peaches, but adding fresh peaches adds even more sweetness and texture, and they go great with the frozen shavings.
- Use your favorite crunchy toppings. I like to use crushed biscuits to add some crunch, but you can also use chopped nuts or add chopped white chocolate or granola if you like.
- Add yogurt. If you want more of a breakfast vibe, add a ton of yogurt to the cream or replace it completely as a base.

These shaved peaches are perfect for serving to a crowd. Not only can you prepare a large amount of cream in advance and have everyone make their own, but you can also freeze peaches for everyone and enjoy grating them yourself over a bowl or adding toppings.

An easy no-bake summer dessert that celebrates the peach season.
- 1 cup thick whipped cream
- 1/4 cup powdered sugar
- 1/2 teaspoon fresh ground cardamom
- 1/2 teaspoon vanilla bean powder or vanilla extract
- 1/2 teaspoon salt
- 3 – 4 Peaches, frozen
- 1 peach, fresh
- For topping: crushed biscuits or crushed nuts
- Freeze the peaches overnight.
- Prepare the cream. Add cream, sugar, cardamom, vanilla, and salt to a stand mixer and beat until soft peaks form. Taste and adjust seasoning as needed.
- To serve, add a spoonful of cream to the bowl. Using a microplane, grate the frozen peaches over the cream. Top with fresh peach slices and crushed cookies. enjoy!
