Six years ago, my friend Liz had the great idea of starting a soup group to help her get through the long dark winters.
Her pitch was simple. I turned off the switch to host soup dinners at home once or twice a month. that’s it!
We continued through the evening, spring, summer, autumn, the next winter. I am very grateful for this type of repetitive activity – it feels like a heartbeat, especially during difficult times. (Do you think it might be similar to how the church feels in terms of looking at the same person in a ritualized way?) Last week we headed to Lindsay’s house, where she made a rich, delicious tortilla soup.

Lindsay’s tortilla soup was so tasty I asked her to share her non-recipe. here it is:
Stir in the carrots and onions and season the tacos as you like (the taco seasoning mix is fine!). Add the chopped chicken breast to the brown color. Next, add the bone soup, a can of diced tomatoes (very valuable to find the type that the fire has grilled!) and green chili peppers. Add lime juice to the flavor and a spoonful of sour cream. Serve with avocado, coriander, lime, cheddar cheese, black beans, corn, green onions, sour cream, tortilla chips and more.
