You pick up a pack of tofu from the shelf, not the refrigerated section, of an Asian grocery store. Now you’re at home wondering if you need to put it in the fridge or if it’s okay to put it in the pantry. Or you’ve always seen tofu in the refrigerated aisle and thought it had to be kept cold all the time, but now you’re looking at shelf-stable boxes and it seems like the rules are different.

Does tofu need to be refrigerated?

Short answer: It depends on what kind you have. Refrigerated water-packed tofu must be kept cold at all times, even before opening. Tetra Pak cartons of shelf-stable, sterile tofu (such as Mori-Nu) do not need to be refrigerated until opened and can be stored in a cool, dry pantry for up to a year. Both types should be refrigerated immediately after opening and used within 3 to 5 days.

Two formats and where they exist

The question about freezing tofu is worth addressing directly, as you will get completely different answers depending on the format. Most food safety posts leave this out and provide blanket answers that are only half correct.

Refrigerated water stuffed tofu This is a block located in the cold section, usually placed inside a bath of water sealed with plastic film. This tofu has undergone processing that requires a continuous cold chain. Refrigerated storage is required from manufacturing to cooking. The safety of this product is compromised if it is left at room temperature for more than 2 hours after opening, or if it is left unopened outside the refrigerator. The store is kept cold, and the refrigerated section is a cue, so it should be kept cold at home, too.

Sterile tofu that can be stored at room temperature Processed under conditions that do not require refrigeration until opened and sealed in sterile multi-layer cartons. Mori silken tofu is the most widely available brand in the United States. OSU Extension Service has confirmed that this type will remain in good quality for 6 months to 1 year at room temperature if unopened. It can be found in the dry goods shelves of many grocery stores and most Asian grocery stores. No need to refrigerate before opening. Valuable cold space is wasted.

simple rules

If you are unsure, please refer to the store. The same place you keep tofu at the store is also where you keep it at home until you open it. If you find it in the refrigerated section, put it in the fridge. If you find it on a dry shelf next to soy sauce or noodles, there’s nothing wrong with your pantry. This rule works consistently across brands and formats.

Once opened, store all tofu in the refrigerator.

This is where the two formats come together. Once you open the package of tofu, whether it’s refrigerated or stored at room temperature, put it in the refrigerator immediately. The sterility seal that allowed tofu to remain shelf-stable in the pantry has now been broken. Tofu is exposed to air, moisture, and surrounding bacteria, so it should be treated like any other opened fresh food.

For open firm tofu or extra firm tofu: Transfer to a clean, airtight container, cover completely with fresh, cold water, seal the lid, and store in the refrigerator. Please change the water daily. Please use up within 3-5 days.

For opened silken tofu: Place in an airtight container, refrigerate immediately, and use within 2-3 days. Silky varieties have a high moisture content and rot faster than hard varieties.

There is no tofu that can be returned to room temperature or the pantry after opening.

Room temperature and 2 hour limit

Due to its high water and protein content, tofu is classified as a potentially hazardous food by food safety authorities. Bacteria multiply rapidly in these conditions. The USDA two-hour rule applies. If opened tofu is left at room temperature for more than 2 hours, it should be discarded. In warm kitchens above 90°F, the limit is 1 hour.

This is actually important during cooking. Remove tofu from the refrigerator when you’re ready to use it, not as a habit when you start cooking. If you’re preparing a recipe that involves multiple steps over a long period of time, store tofu in the refrigerator until you actually need it.

When to throw away tofu regardless of date

  • After opening, leave at room temperature for at least 2 hours (1 hour above 90°F)
  • If stored for a long time in a warm bag or car
  • The package is bulging or bulging before opening
  • More than 5 days have passed since opening
  • A sour odor, slimy texture, yellow or brown discoloration, or visible mold

How to store tofu after opening

  • Farm or Extra Farm (Open): Completely submerge the airtight container in fresh, cold water, changing the water daily. Please use up within 3-5 days.
  • Silken (open): Refrigerate immediately in an airtight container. Please use up within 2-3 days. It is too delicate to store in water.
  • Can be stored sterile (opened): Refrigerate immediately in an airtight container. Please use up within 3-5 days.
  • Boiled tofu: Since it is an airtight container, water is not required. Please use up within 4-5 days.
  • If frozen: Drain, press, wrap tightly or seal in a freezer bag, and freeze for 3 to 5 months. Note that the texture becomes chewier and more porous after thawing, making it suitable for stir-fries, but not for smooth or delicate applications.

Why tofu that can be stored at room temperature is safe even without refrigeration

Sterile, shelf-stable tofu is produced through a sterilization and packaging process that prevents the final product from being exposed to light, air, and bacteria. Mor-Nu’s process, co-developed with Tetra Pak, sterilizes soy milk before coagulating it and seals the resulting soy milk in multi-layered cartons, blocking all three spoilage triggers. As long as the seal is intact, there is nothing to start the rot clock. This is fundamentally different from water-packed refrigerated tofu, which relies on a continuous cold chain to ensure safety rather than sterile packaging. Opening the carton ends the sterile environment and starts the clock.

Can Mori Silken Silken Tofu be stored at room temperature?

Yes, but only before the store opens. Mor-Nu and other shelf-stable aseptic tofu products are processed in a sterile environment and sealed in multi-layer cartons so they can be safely stored at room temperature for up to one year. Store in the refrigerator immediately after opening and use within 3 to 5 days. The shelf life at room temperature ends the moment the seal breaks.

How long can tofu be left out after opening?

Up to 2 hours total at room temperature. This is the USDA’s two-hour rule for potentially hazardous foods, and tofu falls right into that category due to its high water and protein content. In warm environments above 90°F, the limit is one hour. Tofu that has been left out for more than 2 hours should be discarded without being refrigerated.

Does silken tofu need to be refrigerated?

It depends on the format. Silken tofu like Morinu, which comes in a sterile carton and can be stored at room temperature, does not need to be refrigerated until opened. Refrigerated silken tofu, which is sold in a tub of water, must be kept cold at all times. Store both types in the refrigerator immediately after opening, and use them within 2 to 3 days. Because silken tofu has a high water content, it spoils more easily than firm tofu.

I bought tofu from the regular grocery shelf, not the refrigerated section. Is it safe?

Yes, as long as it’s shelf-stable, sterile tofu in a sealed carton. Many mainstream grocery stores stock shelf-stable tofu (often under the Mori-N brand) in the Asian and natural foods aisles. This product is designed to be stored at room temperature until opened. Please check the package. If it is a Tetra Pak style carton and does not say ‘keep refrigerated’ it can be stored at room temperature. If it was a plastic tub of water-filled tofu sitting on an unrefrigerated shelf, it was a store display error and the product should have been kept cold.
