Our entire family loves this easy Zuppa Tuscan Soup recipe. In fact, this is usually the first thing my daughter requests when she gets home from college. It’s voluminous, filling, and may be delicious. even better Day 2 (if there are any left!). Perfect for cold days and cool nights, but enjoyable any time of the year.
I reduced the amount of cream and made it a little brighter. (I promise you won’t notice a difference!) I added more potatoes and kale to stretch it out even further. If you’re feeling even more budget-friendly, you can omit the bacon and use whole milk in place of the cream. It won’t be as rich, but it will still taste great! Paired with easy 30-minute dinner rolls or breadsticks, you’ll have a delicious meal your whole family will want to request again and again for dinner.

Ingredients for Zuppa Tuscany
- 1 onion (finely chopped)
- 6-8 garlic cloves (chopped)
- 1 pound sausage
- 8 ounces bacon
- A few tablespoons of olive oil, if desired
- 6 cups chicken soup and 3 cups water
- 3 1/2 pounds potatoes, peeled and cut into chunks
- 2 teaspoons salt
- 1 teaspoon pepper
- 6 cups kale (chopped)
- 1 cup fresh cream
- parmesan cheese for topping

How to make Zuppa Toscana
1. In a large soup pot, fry the bacon until crispy. Remove and drain on paper towels. Break into small pieces and set aside.
2. In the same pan, fry the sausage until no longer pink.
3. Add chopped onion and minced garlic and fry until softened.(Add more olive oil if needed for frying; this depends on how lean your bacon and sausage are).

4. Add the peeled and diced potatoes and 6 cups of chicken broth. (I use bouillon cube + water)Add 3 cups of water, salt and pepper and bring to a boil over high heat. Reduce heat to medium-low and simmer until potatoes are tender, about 10 to 12 minutes.

5. Add the chopped kale and simmer for another 2-3 minutes.

6. Add fresh cream and mix. Taste and add salt and pepper as needed.
7. Pour into bowls and garnish with bacon and Parmesan.
