Experiment: Pumpkin French Toast Recipe
I recently had a ton of leftover pumpkin bread, and someone on Instagram suggested I try making French toast with it.
My family is big fans of French toast, but I had never thought of trying it before, so I decided to give it a try. I ended up liking it!
(If you’ve been reading this for a while, you already know that I’m a huge pumpkin fan, so I’m not at all surprised that this recipe didn’t disappoint.)
I just pulled my favorite tried and true French toast recipe from mine. A better home and garden cookbook I’ve had it for years and used that recipe, but with pumpkin bread.
And you can totally do this with pumpkin, banana, or zucchini bread. Really, any kind of homemade bread you have left over and want to use up.

- 4 eggs (beaten)
- 1 cup milk
- 2 tablespoons sugar
- 1/2 teaspoon cinnamon powder
- 1/4 teaspoon nutmeg
- A few slices of leftover pumpkin bread (or whatever bread you have on hand)
How to make pumpkin french toast
1. Preheat a griddle or skillet over medium heat.
2. In a shallow bowl or pie plate, combine eggs, milk, sugar, cinnamon, and nutmeg.
3. Dip the pumpkin bread slices into the egg mixture, making sure to coat them thoroughly.
4. Place the bread slices on the griddle for 1 minute or until the first side is slightly brown.
5. Flip and cook the other side for another minute or until slightly brown.
6. Serve with powdered sugar and maple syrup.
How to freeze pumpkin french toast
This recipe is so quick and easy that you can even make 3 batches and once cooled, slice and freeze.
When you’re ready to eat, just toast a few slices and your breakfast is ready.
