This meal was inspired by a great deal I got on kielbasa at Publix this week. But deal or no deal, who doesn’t love a good sheet pan dinner? You can’t go wrong here. All-in-one meals that can be prepared according to your family’s preferences, minimizing kitchen cleanup afterwards. it is win Around you!
I love using potatoes in sheet pan meals. Because it’s a frugal way to feed hungry teens at home with potatoes. This time I added broccoli, onions, and garlic, but you can use any vegetables you like that you have on hand.
I paired this kielbasa sheet pan dinner with some homemade whole wheat french bread Because we’re trying to eat more whole grains. (Instead of processed refined grains) To address family health issues (And let’s be real, store-bought whole wheat bread usually doesn’t taste that good.). However, if you don’t have time or don’t like baking bread, you may want to take advantage of Walmart’s discount bread cart. (Usually located at the back of the store, not the bakery) You can often buy French bread here for less than $1 a loaf.

Ingredients for Kielbasa Sheet Pan Dinner and Homemade French Bread:
- Eckrich Sausage 2 Packages (Publix) — $2.60
- 6-8 Potatoes (Aldi – $3.99 for 10 pounds) — $1.33
- Broccoli crown 1 package (Even your favorite vegetables) (Aldi) — $2.34
- 3 cloves of minced garlic (Aldi — $1.75 for 3 ct package) — $0.18
- 1 Onion (Aldi — $2.09 for 2 pounds) — $0.30
- garlic salt, to taste
- 5 1/2 cups flour (I used a mixture of white and whole wheat – Lidl) – $0.68
- 2 cups lukewarm water
- 2 1/2 teaspoons sugar
- 2 1/2 teaspoons salt
- 1 tablespoon Instant Active Yeast (Sam’s – $6.88 for 2 lbs.) —$0.08
- olive oil for drizzle
Dinner total: $7.51 (serves 6-8+)

How to make Kielbasa Sheet Pan Dinner with Homemade French Bread:
1. Follow the instructions Click here to make homemade French bread. I used a combination of whole wheat flour and white flour.


Preparing the bread to rise
To make things easier, I always use instant active yeast and skip the yeast fermentation process. I just mix everything (However, don’t add all the flour first, just add a few cups.) until well mixed. Then gradually add flour until the dough has the right consistency.
2. While the dough is rising, preheat the oven to 400 degrees.
3. Wash and scrub the potatoes. Cut into small pieces.
4. Peel and slice the onions.
5. Line two baking sheets with parchment paper and spread the potatoes, onions, and garlic in a single layer in the pan. Drizzle with olive oil and sprinkle with garlic salt.

6. Bake for 20 minutes. While the potatoes are baking, follow the instructions. Click here to make homemade French bread.

7. Slice the sausage. Wash the broccoli and break it into bite-sized florets.
8. Remove the pan from the oven and add the sausage and broccoli. Stir together, pour in more olive oil and add more garlic salt to taste.

9. Bake for another 20 minutes or until beginning to brown. Remove from the oven and serve with buttered French bread.

- 2 1/2 teaspoon sugar
- 2 1/2 teaspoon salt
- 1 tablespoon instant active yeast Sam’s – $6.88 for 2 pounds – $0.08
Instructions

In a large bowl or in a stand mixer fitted with a paddle attachment, combine warm water, yeast, sugar, salt, and 2 cups flour. Mix by hand or on medium-low speed.

Add the remaining flour, 1/2 cup at a time, and knead until the dough is smooth but not sticky. (The exact amount to use depends on your climate, but is usually around 5 cups).

Rub the dough ball with olive oil, cover the bowl with a tea towel and let it rest for 15-30 minutes, or up to an hour.

Divide the dough in half. On a floured surface, roll half of the dough into a rectangle about 15 inches wide. Next, roll the dough into a cylinder starting from the long side. Pinch the seams closed, tuck the edges under and place the bread on a baking sheet. Round the edges and make 3 diagonal cuts in the top of the bread.

Repeat this process with the second half of the dough.

Cover the bread loosely with a tea towel and let rise for 30-60 minutes (or longer if you have time).

Preheat oven to 400 degrees.

While the dough is rising and the oven is preheating, wash and scrub the potatoes. Cut them into chunks. Peel and slice the onion.

Line 2 baking sheets with parchment paper and spread the potatoes, onions, and garlic in a single layer in the pan. Drizzle with olive oil and sprinkle with garlic salt.

Bake for 20 minutes. While the potatoes are baking, slice the sausage. Wash the broccoli and break it into bite-sized florets.

Remove the pan from the oven and add the sausage and broccoli. Stir together, pour in more olive oil and add more garlic salt to taste.

Return the kielbasa mold to the oven and place the baking sheet with the bread in the oven as well. Bake both for about 20 minutes, or until the vegetables begin to brown and the top of the bread is golden brown. Once the bread is baked, you should hear a hollow sound when you knock on it.
