This is one of the few menu items that all 6 members of my family request repeatedly! It’s also a super easy family meal that you can throw together at the last moment. many It’s cheaper than going to Chipotle for the whole family. I almost always include black beans, but this week I somehow forgot to write them down on my shopping list, and when I tried to make this recipe, they were completely out. And guess what? It was still good!
The base of this bowl is rice, but each person can add whatever they like to the bowl. I enjoy adding chicken, cilantro, cheese, lettuce, and grilled onions and peppers. Other tasty toppings include black olives, chopped onions, and sour cream.
You can serve it with chips and salsa, or crumble the chips into a bowl. Use your preferred method. It is also ideal for entertaining meals as it caters to a variety of tastes and food sensitivities.

How to make homemade chipotle chicken bowls:
1. Wash and chop the romaine and cilantro and place each in a bowl.
2. Next, cook the chicken and rice using your preferred method if they are not already cooked. (This recipe is perfect for using up leftover rice or chicken!)

3. Place chips, salsa, and shredded cheese in three separate bowls.
4. Slice the peppers and onions. Add a little olive oil to a frying pan and fry, stirring occasionally, until softened. Remove from the pot to a bowl and set aside.

5. In the same skillet, heat the cooked chicken until warm.
6. Serve all the ingredients buffet style and everyone makes their own bowl starting with the rice.
