If you’re having a hard time finding meals you can throw together quickly this week, consider getting some ready-made bruschetta and making this easy bruschetta chicken recipe. I’ve made it a few times now, and my family seems to like it because it’s cheap and comfortable. I especially appreciate that it takes less than 10 minutes to prepare in the oven.
You won’t regret adding bruschetta chicken to your meal plan.
The melting texture of fresh mozzarella goes especially well with tomatoes. A flavorful olive oil “sauce” will form at the bottom of the pan. A perfect combination when eaten with a salad or freshly baked bread.

Bruschetta with grilled chicken, roasted peppers, and shredded fresh mozzarella.

Preheat oven to 375 degrees.

Season the chicken on both sides and add to the baking dish.

Spread the tomato bruschetta over the chicken and place the roasted peppers on top. Top with shredded cheese, balsamic drizzle, and fresh mozzarella.

Bake in the oven for 30 minutes or until internal temperature reaches 165 degrees. Serve hot.
