I can’t even call this a “recipe”. This is just a wrap-up dinner inspired by breakfasts that the whole family will love. It’s versatile and can be easily adapted depending on what breads are in the clearance cart at the back of your local Walmart. I’ve tried bagels, ciabatta, rolls, and English muffins and they’re all delicious!
Tonight I made a grapefruit and green bean sandwich, but the possibilities for side dishes are endless. It’s a staple dinner in our house because it can be eaten in less than 30 minutes, including the side dishes.

Breakfast sandwich ingredients:
- 6 ciabatta rolls (or bagels or other bread)(Walmart discount cart – 1 bag of 12 for $1) — $0.50
- 4 tablespoons butter (Aldi – $3.39 for 1 pound)— $0.42
- 1 pack of bacon (Aldi – $4.49 for 1 pound)— $2.99
- 6 ounces sliced cheese (Aldi – $1.49 for 8 oz) — $1.12
- 6 eggs (Aldi – $1.96 for 1 dozen) — $0.98
- 3 grapefruits (Aldi – $3.99 for 5 lbs) — 1 dollar
- 2 cans of green beans (Aldi – $0.50 per can) — $1
- Season with salt and pepper.
Total for the entire dinner (for 6 people): $8.01
How to make homemade breakfast sandwiches:
1. Fry the bacon in an electric frying pan. Place the cooked bacon on a paper towel to drain the oil.


2. Add the eggs to the same frying pan and fry in the remaining bacon fat until cooked to your liking. Remove from skillet onto paper towels.


3. Cut the ciabatta in half and brush each half with butter. Place on a cookie sheet and bake in the oven until lightly browned. As soon as you remove the rolls from the oven, place a slice of cheese on top of half of the hot rolls (you can also add the cheese slices during the last minute or so of baking).

4. Prepare sides to serve with sandwiches.

5. Assemble into sandwiches and serve immediately.
