What Do You Eat for Lunch?

My present Hyper fixed food Is this simple fridge salad?

The other day, my friend Maddie whipped Mediterranean couscous. She’s the one who peers into the cupboard and takes this bit and a bit of it, suddenly eating the best you’ve tasted for years. (Are you an intuitive chef too? I think it’s really fun to watch.)

We now have this huge bowl of couscous in our fridge and I have it for lunch every day. The boys love it too. As they say, it is infinitely refable, so you can add any toppings you want.

Mediterranean Couscous
8 Lunch Servings

Extra virgin olive oil
16 oz Pearl Couscous
Better than the bouillon (option)
1 shallot
1 Lemon
Cherry tomato pint
6 Persian Cucumber
Two red peppers
Red onion
avocado
Rotisserie or Grilled Chicken (optional, skip to make vegan/vegetarian)
Fresh dill
Dried oregano
Cinnamon pinch
Salt and pepper, taste

Heat a little oil in the pan, add couscous and toast the grain until you lightly toast. Add 2.5 cups of water and about 2 teaspoons, about 2 teaspoons, than the broth (optional). Stir occasionally until the water is absorbed and the couscous is soft, adding more water if necessary.

Meanwhile, slice thinly, slice shallots and place in a small bowl. Squeeze one lemon juice over a slice of shallot and marinate it.

Next, chop the tomatoes, cucumbers, peppers, red onion, avocado and chicken and place in a large mixing bowl.

Once the couscous is cooked, add it to a large bowl of chopped vegetables. Add a glow of olive oil and season with a pinch of dill, oregano and cinnamon (trust us with this!).

Add shallots and lemon juice to the bowl and season with salt and pepper.

Feta
Goat cheese
Crushed red chili pepper
capers
olive
Conicon
Sliced radish
Grated carrots
Corn
Roasted vegetables
Chickpeas
Black beans
Hummus population
Cruuton
