This vanilla syrup is easy to make and very convenient. I love adding this to homemade lattes and other coffee drinks, or to cold drinks like sparkling water or Diet Coke. Simple vanilla syrup is also useful for making many different types of cocktails and can be used as a glaze on baked goods.
This vanilla syrup recipe only has 3 ingredients and takes about 15 minutes to make.

How to make vanilla syrup
Add sugar and water to a small-medium saucepan. Heat over medium/high heat and whisk until sugar is completely dissolved. The water will become hot during this process, but it does not need to boil.
Remove from heat and stir in vanilla bean paste or vanilla extract. If using a vanilla bean, slice towards the center and use the tip of a knife to carefully scrape out the bean (the small black dot). Add these and the vanilla bean pods to the syrup. Whisk to combine. Let the mixture stand for about 10 minutes to cool.
If you used vanilla bean pods, remove them now. Pour the vanilla syrup into a storage container.

Tips and notes
- Vanilla bean paste, vanilla beans, or vanilla extract all work well in this recipe. However, if you want the vanilla bean look (tiny black spots), you should use either vanilla bean paste or vanilla beans.
- Store vanilla syrup in an airtight container in the refrigerator for at least 2 weeks.
- As you can see from the photo above, my vanilla bean paste was actually “Bourbon vanilla bean paste” so it had a slightly different flavor. that’s ok! This is simple vanilla syrup. Add cinnamon, nutmeg, or whatever you like.
- If you replace the granulated sugar with brown sugar, it will have a slightly different taste.
