How to make corn toast
This is the ultimate make-ahead snack. My mom would chop up all the peppers, mix them with corn and spices, and store them in an airtight container in the fridge. Then when she was ready to serve the toast, she’d add a bit of cheese. And that’s it!
To make the toast, place the sliced ​​bread on a baking sheet lined with baking paper for easy clean up. Layer the corn topping on top of the bread and top with more cheese to melt. For your desired doneness, you can air fry, grill or bake. Sometimes I like my toast melted, but other times I like toast it longer so the cheese is crispy. Toast to your heart’s content.

Trust me, this corn toast is delicious just as is, but my brother and I have developed a few variations that are just as delicious.
Top with mixed herbs or mint chutney. Finely chopped herbs such as dill, coriander, and green onion, and lots of lime or lemon juice make this toast even more addictive. The freshness of the herbs goes well with the melted cheese. Mint chutney is also perfect. This toast is also surprisingly delicious when drizzled with lots of ketchup.
