Confession: I’ve spent the last few months completely unable to cook. If you’ve noticed zero desire to cook dinner, too many take-outs, and no new recipes on the site this fall…that’s why. But thankfully, I love all things cooking, so I couldn’t be happier to be cooking and creating in the kitchen this year.
I don’t know exactly when it changed, but suddenly, as I was brainstorming new recipes, my brain started firing on all cylinders again. I have so many ideas for dishes I’d like to make using winter ingredients that it’s impossible to make them all by spring. (I have a whole theory about how creative hibernation actually leads to these bursts of inspiration, but I’ll save that for another post.)
That said, I’ve been cooking up a storm this month and can’t wait to share some new recipes with you. And whether you’re feeling inspired in the kitchen or not, it feels like many of us started 2026 with the intention of cooking. More recipes at home. There’s no question that it’s usually 10 times healthier and more affordable than restaurant meals. So today I’m sharing how to plan healthy weeknight meals that are infinitely adaptable to your family’s dietary preferences.
The four meal templates that I am currently making on repeat are: Simple enough to put together on a busy weeknight, but interesting enough that you can actually excited To cook again. And the best part? You can change it to suit what you have in your fridge.
