Strawberry Syrup – A Beautiful Mess

This strawberry syrup recipe is a compliment to sparkling water, cocktails, special mocktails, diet coke, or sparkling water for making your own strawberry milk or strawberry latte. Another name for this recipe is Strawberry Simple Syrup. This is easy to mix simple syrup made with fresh strawberries. It’s not a thick syrup like the ones you use on top of pancakes.

This strawberry syrup recipe requires only two ingredients (water) and a piece of work that is less than 20 minutes. Store-bought strawberry syrup is fine, but if you want something made from fresh ingredients or without preservatives, then make this!

  • Strawberries – fresh or frozen
  • Granular white sugar
  • water

How to make strawberry syrup

Hull and quarterly fresh strawberries. If you are using frozen, thaw first.

Add sugar and water in a small to medium sized pot. Beat until the sugar is completely dissolved. Add the strawberry pieces and bring to a boil. Reduce heat and simmer for 10 minutes until the fruit is very tender. Remove from the heat.

Let the mixture cool in a pot. This will soak the flavor even further. Next, pour the liquid through a fine mesh sieve and pour it into the cup. Using a large spoon, really push the liquid out of the strawberry debris.

Store strawberry syrup in the fridge in an airtight container for up to 2 weeks. If you think you need to store it for a long time, you can freeze a simple syrup from the ice cube you use whenever you want.

Tips, Alternatives, Notes

  • I like to use fresh strawberries at the peak of the season for this recipe. But strawberries always work well and are ok to freeze!
  • I like to keep this simple, but I can add a little more flavor and dimensions to this simple syrock recipe if necessary. Add one or more of these during the cooking process: vanilla bean shell, vanilla extract, fresh herbs (basil, rosemary, mint, thyme), balsamic vinegar, citrus lind (orange, grapefruit, lemon or lime) or a large pinch of sea salt.
  • Replace some or all of the granulated white sugar with brown sugar to change the flavor profile.

No, Grenadine syrup is made from pomegranate. But if you replace them, they will be similar and have a slightly different flavor.
