In the spirit of spring, I focus on living by the words “planting the seeds you want to grow.” As someone who strives to bring intentions to her life, I think Spring is an opportunity to choose to thank herself later this year. And this is a better way to do this than gathering friends and welcoming the spring equinox.
If you’re not familiar, Spring Equinox is the moment when the sun crosses the celestial equator, bringing about roughly equivalent sunlight and darkness around the world. It marks the beginning of spring in the Northern Hemisphere and occurs every year around March 20th or 21st. After equinox, the days get longer until the summer solstice and the nights get shorter.
Many traditions around the world are praised at festivals, ceremonies and gatherings to welcome the warmer and brighter seasons today. It could be a chance to refocus your energy and welcome balance and updates. And since spring is not the same unless there are plenty of seasonal ingredients, we have put together a list of the best spring equinox recipes to help you plan your celebration and inspire you to what’s ahead.
These menu ideas will help you create menus that will make your guests feel refreshed and rejuvenated. There are recipes for each course and some that everyone can find joy, focusing on the season. After solidifying the menu, grab a new beginning with fresh flowers, a favorite diary, a picnic blanket, and a group of close friends.
Whether you’re hosting a meeting or simply wanting to embrace the spirit of spring, these menus stimulate creativity and connection to the rhythm of the earth. Read all courses of food. Don’t forget about drinks and desserts!
Appetizers

Carrots and hummustoast
Carrots are all year round, but are the best in the spring and fall months. When harvested in late spring, this vegetable has a sweeter taste and a crunchy texture. These toasts are an excellent way to integrate this balanced ingredient into your Spring Equinox menu and are served on top of your preferred hummus and soft bread layer.

Snappea salad
This unique recipe was made to enjoy a picnic style. With a bit of crunchy, sweet sugar snap peas, crispy cucumbers and a bit of soft white beans, this salad is a simple make-up recipe you’ll want to make every spring.

Spicy marine olives
There’s a lot to love about these spicy marine olives. It is made with garlic, chili, zaatar and lemon z’atar to it in 5 minutes. Serve yourself or on top of your favorite hummus or a bowl of soft, crusty bread.

Feta salad with white beans and lemon
Hearty salad recipes are the perfect appetizer to incorporate extra nutrients into your menu. This salad is balanced with the ratio of tender feta to chopped vegetables. Topped with fresh herbs and butter beans, it makes everyone feel satisfied but not stuffed.

Honey yogurt, date, burnt almond carrot
The burnt carrots offer a sweet, smoky, balanced bite and create a stunning side dish to add to the Spring Equinox menu. Garnish with seasonal herbs like fresh dill and mint, serving a little eagerly on this bed of honey rime Greek yogurt.

If you’re looking for a pop of colours on the Spring Equinox menu, this citrus salad might be that. With just five ingredients, it’s never been easier to throw together a colorful plate packed with vitamin C.

Smoked Ciliary Iori simple potato salad
With the spirit of keeping things light and fresh, choose this simple potato salad with smoked chili ilio as an alternative to the classic Southern or German potato salad. Without a cup full of mayo or mustard, you can really appreciate Aioli’s heat kick and a fresh touch of dill.

Strawberry Brata salad
This recipe highlights my favorite spring fruit, stoneberries! Enjoying this fresh fruit with its prime is the key to juicy, sweet berries without sourness. Combined with creamy brutta and fresh mint leaves, this salad is practically appealing.

Bake romaine salad with cherry
Have you ever baked a salad? If not, this recipe is a great opportunity to jump on the underrated trend. All you need is the distinctive romaine, juicy cherry, creamy feta, crunchy walnuts and tangy Meyer lemon dressing, including the grill and five ingredients.
Main dishes

Yogurt marinated grilled chicken
As far as protein is concerned, chicken is one of the most versatile ingredients that will help you achieve your daily goals. However, this recipe is separate from the typical seasoned breasts and thighs. Marinated with avidly flavored yogurt and herb marinated, your chicken remains juicy and flavorful even after pulling from the grill.

Mediterranean kale salad
As Kamille said in full, this kale salad is “the sunlight in a bowl.” With all the key elements of a Greek salad, this healthy and satisfying main course is an excellent option to keep you vegetarian yet filling with crispy chickpea protein.

Mustard roasted salmon and vegetables
This recipe captures the essence of Spring Equinox. Here, vibrant flavours and seasonal produce are gathered in one bread. It is a celebration of the dish’s update and blends soft mustard and tender roasted vegetables for dishes that serve as light, uplifting appetizers to welcome spring.

Spring potato pizza
Potato pizza is one of my favorite ways to enjoy a crispy arugula. Featuring thinly sliced potatoes, fresh herbs and a golden crust that reflects the balance of seasonal warmth and renewal, this pizza captures the finest produce of spring.

Roasted vegetable pasta
This roasted vegetable pasta uses caramelized vegetables to create a entree that is as visually appealing as it stimulates your appetite. This is simple and nourishing to the menu as it contains a large selection of vitamins, using whole ingredients such as eggplant, zucchini and peppers.

Rhubarb meringue cake
If you didn’t know, rhubarb is one of the best seasonal fruits to enjoy in the spring. That being said, this cake is the perfect spring equinox dessert with a festive, seasonal feel and infused with a sweet balance with tarts.

This Limoncello Spritz is no longer suitable for Spring Equinox menus. Bubbling, golden, kissing along with the lemon Tang is like taking a picture of the sun’s rays in a glass.

Salty dog cocktail
Reminiscent of the pale pink colour of a spring sunrise, this grapefruit vodka cocktail is crisp, citrusy, and has a refreshing balance. Add a light salted rim to bring it all together.

Elderberry Spring Cocktail
Last but not least, this is definitely the elderberry cocktail. St Germain is the ingredient in this cocktail’s hero and pairs it with vodka, sparkling water and fresh Meyer lemon juice to make all the glasses you love about spring.
