Raspberry Syrup – A Beautiful Mess

Homemade raspberry syrup is very easy to make and requires only two ingredients and water. You can create this in under 20 minutes and use it in any other recipe. This is a simple raspberry syrup, so think about the thin consistency you can add to your drink. Not like thick syrup that you might add to your pancakes.

Raspberry syrup is perfect for adding to cocktails, mocktails, sparkling water and soda (such as diet cola) and for making raspberry lattes and mocha.

  • Raspberries – Fresh or Frozen
  • Granular white sugar
  • water

I like fresh raspberries for this recipe, but Frozen works just as well. If you use frozen and thawed before using this recipe.

How to make raspberry syrup

Rinse the raspberries and remove the leaves.

Add sugar and water in a small to medium sized pot. Beat until the sugar is completely dissolved. Add the raspberries and bring to a boil. Reduce heat and simmer for 10 minutes until the fruit is very tender. The berries start to break down. Remove from the heat.

Let the mixture cool in a pot. This will soak the flavor even further. Next, pour the liquid through a fine mesh sieve and pour it into the cup. Using a large spoon, really push the liquid out of the raspberry fragments.

Store Raspberry syrup in the fridge in an airtight container for up to 2 weeks. If you think you need to store it for a long time, you can freeze a simple syrup from the ice cube you use whenever you want.

Notes and Replace/Add

  • Scoop out any white foam that accumulates on the syrup before storing.
  • I like to keep this simple, but I can add a little more flavor and dimensions to this simple syrock recipe if necessary. Add one or more of these during the cooking process: vanilla bean shell, vanilla extract, fresh herbs (basil, rosemary, mint, thyme), balsamic vinegar, citrus lind (orange, lemon or lime), or simply a pinch of large sea salt.
  • Replace some or all of the granulated white sugar with brown sugar to change the flavor profile. Replace the demerara sugar and change the texture of the syrup.
  • I’ve stored raspberry syrup on this Spout and glass bottle easy to use.
