Pot Roast – A Beautiful Mess

When I was a kid, slow cooker pot roast was one of the meals often served after church on Sundays. So it was like a family lunch in my mind. I suspect part of this was how I could set up the pot in the morning before getting the kids ready and heading out to church, and have the meal ready a few hours later. . And as a child, I didn’t appreciate this simple, classic meal at all.

This pot roast recipe is simple and only requires a handful of ingredients. Shoulder roast is not a very expensive piece of beef, so it is inexpensive. It’s easy to make, just put everything in the slow cooker except sear the meat and press the button. But for me, this traditional pot roast recipe is very nostalgic and comforting. Plus, the flavor is rich and the tender meat shreds easily with a fork.

Pot Roast – A Beautiful Mess

material

  • chuck roast
  • Oil – canola oil, vegetable oil, or olive oil
  • salt
  • black pepper
  • beef bouillon
  • beef soup
  • onion or shallot
  • potato
  • carrot

how to make pot roast

Let the chuck roast sit until it comes to room temperature, about 30 minutes. Season well with salt and pepper on both sides. Add 1 tablespoon cooking oil to a large skillet. Cook the roast on both sides over medium heat.

Add roasted meat to a slow cooker (also known as a crockpot). Add the bouillon cubes, broth, chopped onions, washed potatoes and peeled and chopped carrots.

Cook on low for 8 hours or on high for 4 hours.

Please enjoy warm. This pot roast is fork tender and delicious! Feel free to drizzle the juices from the slow cooker over roasted vegetables and garnishes.

Tips and notes

  • I recommend this if you have time to cook on low heat (8 hours). But if you need this for lunch or forget to turn on your slow cooker in the morning, a higher heat and shorter cooking time will also work just fine.
  • This recipe typically uses beef shoulder roast, but other similarly sized meats will work well as well.
  • If you want to add more flavor, you can add a little soy sauce, Worcestershire sauce, or liquid smoke. Or add garlic powder and a few bay leaves.
  • When I make this for a holiday meal, I usually add some herbs like fresh thyme or fresh rosemary.
  • That’s how my family grew up, so we stick to potatoes and carrots as side dishes. However, any root or hardy vegetables like garlic, turnips, parsnips, celery, yams, and beets will work well here.
  • Using the simmering liquid from the slow cooker, make a gravy by mixing a little butter and all-purpose flour over medium heat until thickened.
