material
- Pizza dough – refrigerated and rolled out (like Pillsbury) is best
- olive oil
- Pizza sauce – store-bought or make your own
- mozzarella cheese
- mini pepperoni
- Italian seasoning – optional, but I really like to add it

How to make pizza cupcakes
Roll out the pizza dough and cut into small circles using a 4-inch round cookie cutter.
Use a pastry brush to brush the inside of each cupcake cavity with oil. You can see that a little oil has collected at the bottom. Not a lot, but enough to get some crispy areas while baking.
Add pizza batter to prepared cupcake pan. Then add some cheese to the bottom, top with the sauce, top with more cheese, and top with pepperoni. If using, sprinkle with Italian seasoning.
Bake at 400°F for 13-15 minutes. It takes about 13 minutes in my oven. The edges will turn golden brown and the cheese will begin to bubble. Remove from the oven and let cool for a few minutes before removing from the mold. Serve hot.

Precautions
- If you want to use another cheese, you can use anything that melts. Sometimes I sprinkle a little Parmesan cheese during the last few minutes of baking.
- If you would like to add toppings other than pepperoni, feel free to do so.
