- Crème de Noyo – This almond-flavored liqueur is made from apricot, peach or cherry pits. The liqueur is similar to amaretto and has a reddish color, which gives Pink Squirrel its pink color.
- White Crème de Cacao – For this recipe, we use white (or clear) creme de cacao as a darker colour wouldn’t work with the pale pink colour.
- Fresh cream – Gives this cocktail a very creamy finish.
- nutmeg – Freshly ground nutmeg is best, and you can usually find whole nutmeg in the spice section of your grocery store.
- Maraschino Cherry – Optional decoration.
Required Equipment: The best glass for this cocktail is Martini Glass or Coupe GlassAlso, Cocktail Shaker.
Instructions
Add the crème de noyo, white crème de cacao, and heavy cream to a cocktail shaker filled with ice.
Shake for 10-15 seconds or until shaker is cool enough to handle.
Strain and pour into a coupe glass.
Garnish with a maraschino cherry and a sprinkle of freshly ground nutmeg.

- Substitute for Creme de Noyo – This ingredient can be hard to find. My local store didn’t carry it so I had to order it. You can also use amaretto instead of creme de noyo. It will taste similar but won’t have the pink color. To add pink color, use 1 drop of food coloring or 1/2 ounce of pomegranate juice.
- Decorating ideas – The Pink Squirrel is typically garnished with fresh nutmeg and a maraschino cherry. Other fun ideas include adding a sprinkling of pink around the rim, adding whipped cream to the drink as a topping, or even serving a pink candy (or a cocktail skewer with a few candies stuck in it) on top of the drink.
- Pink Squirrel Milkshake – Transform the Pink Squirrel into a frozen cocktail. In a blender, combine 2 tablespoons of crème de noyo, 2 tablespoons of white crème de cacao, and 2 cups of vanilla ice cream. Top with whipped cream, fresh nutmeg, and a maraschino cherry.
