Grits are simply dried corn crushed into fine chopped sardines. It’s not very similar to Polenta. When we think of grits, we think of the comfort food of the South. But you don’t have to come from the south to enjoy this easy and delicious food. The grits are flavorful and sweet, and can be enjoyed for breakfast, lunch or dinner. It’s a very versatile food.
People can sometimes be threatened with making grits, assuming there are right and wrong ways, but this is not really true. Like most foods, there is a traditional way of making and serving it more or less, but in the end it becomes more to your own tastes and preferences. I usually stir in cream (half and half) and also shredded or grated cheese in grits. But it depends on what I am offering with it. When making delicious grits, use water and chicken broth (most of the time).


How to make grits
Bring the water to a boil. Add the chicken broth cubes and stir to dissolve.
Stir in the grits, whisk, and continue cooking over medium heat for 12-14 minutes. Stir occasionally to prevent the grits from sticking to the bottom of the pan.
Remove from heat and stir in butter, salt and pepper. The grits are done when they have a smooth, creamy texture, and the grain feels soft without slurping. If you’re adding cream and cheese, add this now so that everything melts and warms together.


Tips and notes
- Grits are made with a 4:1 ratio of water (or stock) to grits. The recipe card here listed 2 cups of water in 2 cups of grits (to make two servings). You can cut this by half or twice as much. Use a 4:1 ratio as a guide.
- Grits are usually labelled simply grits, stone ground, or old fashioned. If the package says “instant” then this means that the grits will be pre-cooked and the preparations will be different (just add boiling water).
- Water and chicken broth cubes can be replaced with chicken stock or soup. You can also use other types of stock (beef, seafood, etc.) depending on the flavor of the grits and the way you like what you are offering.
- If you want to make your grits richer, add butter, cream or cheese. If you want to make the grits thinner, add some liquid when cooking.
- If you want to make sweet grits, skip the bouillon cube and black pepper, and usually add a bit of brown sugar and cinnamon to make the grits flavor and sweet. The cream and butter are still a great addition. Alternatively, you can add a bit of cream cheese.
