Fried Rice – A Beautiful Mess

This fried rice recipe can be customized in so many ways, making it one of the best clean out the refrigerator meals. The basics of fried rice are pre-cooked rice fried in a large frying pan with other ingredients such as vegetables, eggs and flavorful sauces. It’s easy and everyone needs to know how to cook food!

I keep this fried rice sauce very simple (still good!), but if you want to raise the game, try stir-frying with this technique.

Fried Rice – A Beautiful Mess

material

  • Rice – I like jasmine, but medium grain white and brown rice work
  • Onion – Yellow, White, or Red
  • Garlic
  • Oils – Cooking oils such as canola, peanuts, olives
  • Frozen peas and carrots
  • egg
  • Light soy sauce
  • Dark soy sauce
  • Sesame oil
  • Green onion – also known as green onions

How to make fried rice

Cook the rice a day or two beforehand. You can also use leftover rice from other meals or take out.

Chop the onion finely and chop the garlic.

Heat the oil over medium/high heat in a large frying pan or wok. Fry the onion for 1-2 minutes until it’s soft. Next, add the garlic and cook for another minute. Then throw the (frozen) peas and carrots. Cook for another 2 minutes.

Push the vegetables sideways and add sesame oil to the empty portion of the pan. Add the cooked rice and stir-fry the bread for 30-45 seconds. Then continue cooking for a few minutes, stirring with vegetables.

Broke the egg into another small bowl. I do this so instead of cracking the egg directly into the bread, I can remove any shell pieces that can enter. Now, push the rice mixture onto one side of the pot and add the eggs to the empty area. Scramble for 10-15 seconds, then stir with the rice mixture.

Pour in the sauce and saute until everything is well coated and hot. Add the chopped green onions to warm up.

Tips and alternatives

  • Other frozen vegetables and vegetable mixes work well here, just like all peas and peas, carrots and corn mixes.
  • You can add (fresh) vegetables to this, such as broccoli, cabbage, carrots.
  • If you can’t find dark soy sauce, this recipe can replace the oyster sauce.
  • You really want to have already had a day for this and already cook some meals. I put the rice on a plate the afternoon before I make this (for dinner) to allow it to dry a little more. Think of it like French toast. You want dried bread rather than fresh, tender bread, which could otherwise be too flooded.
  • This fried rice is vegetarian-friendly, but still has protein from eggs and peas (high protein vegetables). But if you want to add another protein, the shrimp and chicken cooked here work well. I sometimes toss the shredded rotisserie chicken to prepare some very simple protein.
