Figgy Pudding – A Beautiful Mess

This fig pudding recipe is inspired by the classic Christmas song “We Wish You A Merry Christmas.” Even as a child, lyrics about fig pudding always perked my ears.

Apparently I’ve been obsessed with desserts all my life. If you’re looking for a Christmas pudding dessert, try this easy fig pudding recipe.

My goal with this recipe was to make a bread pudding-like cake that was full of figs but still had a festive feel. It’s like a Christmas dessert served at the end of a fancy dinner.

The dough uses fig jam and dried figs, so don’t worry if you can’t find fresh figs in your area (I couldn’t find them)! The result is sweet, nutty mini cakes drizzled with a lightly spiced syrup.

history

This recipe feels like a classic Christmas dessert to me, but it bears no resemblance to traditional fig pudding. My understanding is that traditional British cuisine is similar to a steamed cake made with raisins, currants and brandy. It may also include oranges, plums, golden raisins, rum, and spices such as cinnamon, cloves, and nutmeg.

I’ve also read that fig pudding may have referred to a savory dish made with fish. This is another way of looking at it.

This reminds me of a Midwest “poke cake”. Poke small holes all over the cake before pouring the syrup over it. This will make the inside moist and melty, similar to custard.

How to make figgy pudding

This fig pudding recipe (or you could call it Christmas pudding) has three components.

Cake + syrup + cream = Christmas pudding

Each is important to the final dish. Making a cake mix is very easy and can be as simple as making a muffin or baked donut recipe. Syrup only has three ingredients and takes less than 10 minutes to make on the stovetop, but it’s essential.

After the cake is baked in the oven, you need to make many small holes in it using a fork or a toothpick. Then pour the syrup over it. The syrup oozes out through the small holes, creating a moist bread pudding-like texture.

Finally, serve this with whipped cream or vanilla (or eggnog) ice cream. This adds a creamy ingredient that blends well with the flavors and also helps make this dessert feel even more special.

tips for success

  • I like using both fig jam and dried figs (chopped) into the cake batter. You can also add nuts, such as chopped walnuts or pecans. All this enhances the flavor and texture of the cake.
  • It may seem trivial to poke holes in the cake before pouring the syrup on, but I promise it’s not. This reminds me of the “poke cakes” of the Midwest.
  • I love using mini decorative bundt pan For this! However, if you don’t have muffins and don’t want to buy them just for this recipe, you can also bake them in a jumbo muffin tin or muffin tin. baked donut bread.
