Have you ever tried cowboy caviar? This fresh dip recipe is perfect with chips or as a topping for a taco salad. It reminds me of the flavor of fresh pico de gallo with the addition of beans, corn, green peppers, avocado and other vegetables. I made this recipe and my family ate it with tortilla chips for several days.

tips on how to make
- If you have any leftovers, you can store them in an airtight container in the refrigerator for several days. I had it as a snack for a few days and it was still delicious even with the avocado mixed in (definitely the best You can enjoy it fresh! ).
- If you want to make it ahead for a party, we recommend not adding the freshly cut avocado until you’re ready to eat it.
