This homemade cinnamon dolce syrup is a Starbucks copycat recipe, but that’s also the way I like it. I think this is one of the biggest benefits of buying something you purchased from the store and buying it yourself. You can customize it to your liking. This cinnamon simple syrup is sweet, spicy and balanced with vanilla. Perfect for seasonal lattes and cocktails.
This takes less than 30 minutes. It smells like a cinnamon stick and vanilla extract, as it smells like the smell of cinnamon sticks. This is a stew on a stove that leaves a delicious dish in your morning coffee.

- Granular white sugar
- Brown sugar
- water
- Cinnamon stick
- Vanilla extract


How to make cinnamon dolce syrup
Combine sugar and water in a small to medium pot. Beat until the sugar is completely dissolved.
Add cinnamon sticks and vanilla extract. Bring it to a boil, then reduce heat and simmer for 10 minutes. Turn off the heat and allow a steeper slope for another 10 minutes as the mixture cools down.
Remove the cinnamon stick and store in an airtight container.


Notes and additions
- Scoop out any white foam that accumulates on the syrup before storing.
- I like to keep the cinnamon dolchi syrup simple, but one of these additions allows you to spice this basic recipe perfectly.
- I’ve stored raspberry syrup on this Spout and glass bottle easy to use. When stored in the fridge, this syrup lasts for at least two weeks, and probably lasts longer. If you plan to use it for more than this time, consider freezing and thawing it in ice cubes if necessary.
