Chilaquiles – A Beautiful Mess

If you’ve never had Chirakir before, you’ll have to try this recipe! This traditional Mexican breakfast consists of fresh tortilla chips that are quickly cooked on salsa. A simple, affordable meal with a super flavor. I like this as a delicious breakfast, but you can certainly serve it for lunch or dinner too.

This chirakir recipe requires only 5 ingredients and 1 bread to cook. It’s pretty quick to make and doesn’t require any special skills. If you use red salsa for this, make a rophos of tirakir (pictured here). Alternatively, you can use green salsa, salsa verde to make a chirakir verde.

  • oil
  • salt
  • salsa
  • Chicken soup

You can also serve them: Fried eggs, Queso Fresco or Cotilla cheese, sour cream, coriander, red onion.

How to make chirakile

Start by making fresh corn tortilla chips. Cut the tortilla into triangular wedges. In a large frying pan, heat the oil over medium heat. Add the tortilla pieces and cook until toasted, then cook on each side for 1-2 minutes. I use tongs to easily move and flip the pieces. You may need to do this in a batch. All of them are because even a very large frying pan can’t fit at once.

After cooking on both sides, transfer paper towels to a lined plate and sprinkle with salt on top.

In a blender or food processor, mix the salsa and chicken soup (or chicken stock) until smooth. Return to the hot skillet and toss the chips of the salsa mixture until everything is well coated and hot.

With minimal IMO with coriander, red onions, sour cream and some kind of cheese, it’s the top of anything you want to offer these. I also want to add a fried egg to prepare my meal.

Tips, alternatives, add

  • Look for fresh salsas for sale in the refrigerated section of your grocery store. Alternatively, you can make your own homemade salsa to use for this. And be aware that this recipe will require a considerable amount of salsa. So, if you’re using spicy food, don’t overdo it. If you need more heat, you can always add a hot sauce.
  • I love chirakir as a breakfast or breakfast situation, so adding a fried egg is perfect for me. However, if you don’t feel fried or scrambled eggs, other proteins are great, such as black beans, chicken, beef, pork.
  • Some other additions with this include garlic, tomatoes, cremas, tomatiro salsa, or hot sauce.
  • You may wonder, can I use store-bought tortilla chips instead of freshening them for this recipe? I don’t recommend it. These fresh tortilla chips cook differently and provide a totally different texture to your final dish.
  • The Chirakir is perfect for the day they were made. If you’re looking for options to make a makeup on, you can fry the tortilla chips first and then wait for them to follow the rest of the recipe.
