I love a flavorful breakfast and this easy breakfast burrito recipe hits the spot! Crispy potatoes, tender scrambled eggs and plenty of flavors are all wrapped in warm tortillas. Sign up now.
You can also call this a breakfast wrap. Because breakfast food wrapped like burritos doesn’t have any particular burritos about it. I tend to stick to more Tex-Mex type materials, but this can be customized in any kind of way.

Breakfast Burrito Ingredients
- Hash brown putty
- egg
- sausage
- cheese
- Flour tortilla
- Salt and pepper
I also like to add some coriander and a bit of hot sauce in my breakfast burrito, but this is up to you. I usually serve salsa on the sides, not on the inside of the burrito.

Cook hash brown pate. I do this, put the frozen hash brown putty in an air fryer and use the air fry (390°F) for 10-11 minutes (390°F). If you don’t own an air fryer, you can also stir-fry or bake.
Fill the eggs and soft scramble together, melt in a non-stick pan and season with a little salt and pepper.
Cook the sausage until complete or warm up if using predecessor or vegetarian sausages.
All the ingredients for the breakfast burrito are ready, so you can assemble the burrito. If the tortilla shells are cold or refrigerated, warm them in the microwave or bread for 10 seconds. This is to prevent us from tearing when we roll them up.
Place the warm tortilla shells on a large square aluminum foil. Add hash brown pate, scrambled eggs, sausage, shredded cheese, chopped coriander and a bit of hot sauce (optional). Roll onto a burrito and wrap in the aluminum foil. Repeat to make many breakfast burritos you’re making.
Place the prepared breakfast burrito in the oven at 400°F for 8-10 minutes. This is to make sure everything is warmed at the same temperature and melts the cheese. Another option is to bake or stir-fry like Chimichanga.
Once the cheese has melted, tear the foil and enjoy the breakfast burrito. Serve it with some salsa, sour cream and more.


Tips and alternatives
- Hash brown putty makes this very easy to make. However, other potato options are available, such as hash browns, tater tots. I like crispy things and I like great things if the air fryer is mine.
- If you need fluffy eggs, whisk in a tablespoon or two tablespoons of milk. If you don’t own a high-quality non-stick pan, you can add a little butter or oil to the pan before cooking to prevent scrambled eggs from sticking.
- The breakfast sausages are amazing here. Or you can use vegetarian breakfast sausages (we do a lot of this in our home, that’s what’s depicted here) or other proteins like bacon.
- I tend to use shredded cheddar cheese, but the melted cheese is great like pepper jack and Colby jack.
- If you want to microwave these rather than use an oven, replace the aluminum foil with parchment or wax paper.
