There are some foods that work well together. It is impossible for them to not love. Tomato and mozzarella cheese. Peanut butter and jelly. Strawberry and cream. And in my kitchen, the Holy Trinity of Breakfast: Bacon, Eggs, Avocados. They seem to be that perfect couple, both people are individually wonderful, but magic when they come together.

These breakfast tacos are simple, but what’s the combination of creamy avocado, scrambled eggs, salty bacon and smoky roasted tomato salsa wrapped in warm corn tortillas? I’ll dig completely. It’s a breakfast that will typo all the right notes: nutritious, satisfying, (be honest) and really get crazy.

Whether you’re a longtime breakfast taco follower or new to this concept, straighten one thing.

They were the ones we grabbed, descended to school, and shared around the table on a slow weekend morning. And beauty lies in simplicity – there’s no need to overthink it. Warm tortillas filled with delicious nutritious ingredients. If you haven’t yet fully discovered the joy of breakfast tacos, you’re definitely for the treat.

Balanced nutrition, big flavor

Aside from being incredibly tasty, these tacos check every box when it comes to a balanced breakfast. Let’s break it down:

  • Healthy fat: Avocado brings you satisfactory monosaturated fats, keep you full and support brain health.
  • protein: Eggs and bacon help to add lasting power and build lean muscle.
  • fiber: Corn tortillas and avocados provide intestinal-friendly fibers to support digestion and blood sugar balance.
  • Vitamins and minerals: Tomatoes provide lycopene and vitamin C, while coriander is an amazingly powerful herb rich in antioxidants.

How to make a great breakfast taco

Some tips that make all the difference:

  • Use corn tortillas for its authentic atmosphere (and extra fiber). I like to warm them up in a dry skillet or on an open flame until they are slightly burnt because they are soft and slightly burnt.
  • Go with the roasted salsa. It adds smoky depth and brings it all together.
  • Strategically Layer: Start as a creamy base from avocado, then thrives with eggs, bacon, salsa and coriander to finish.
  • Easy to prepare meals: You can cook bacon and make salsa in advance. You can freshen the eggs and give them the best texture.

Winning breakfast on the day

On weekdays, I make a simple version with pre-cooked bacon and store-bought salsa. On weekends, I go all in with my homemade roasted tomato salsa and drink coffee with my family. Either way, these tacos (or similar variations with sauteed spinach and zucchini!) are my go-to breakfast when you want something purposeful and lively.

This Austin-inspired breakfast taco is packed with protein, healthy fats and fiber, giving you a balanced start to your day.


  • 4 Corn Tortilla

  • 4 big eggs

  • Kosher salt and freshly ground black pepper
  • 4 slices of crispy bacon, chopped

  • 1 Ripe Avocado, Destroyed

  • 2 tablespoons finely chopped raw onion

  • Handful of fresh coriander leaves

  • 1/4 cup Smoky Tomato Salsa (Buy in the store or Homemade)


  1. In a small bowl, crack the eggs and whisk with a tablespoon of water (or milk if you want creamy), a pinch of kosher salt, and a fresh black pepper. Warm the pan with enough butter or olive oil to lightly coat the bottom of the pan, and warm it up with medium low heat.
  2. Add the eggs to a frying pan and cook them, stirring them with a spatula, and then to your liking. Remove from the heat.
  3. Warm the corn tortillas in a dried frying pan or directly warm the gas flame until they are soft and slightly burnt.
  4. To assemble, spread the smashed avocado over each tortilla.
  5. A generous spoonful top of scrambled eggs, chopped bacon, fresh onion, coriander and smoky tomato salsa. Enjoy it warmly!

To make gluten-free, use Sieté Cassava tortillas.
