4 Corn Tortilla

4 big eggs
- Kosher salt and freshly ground black pepper

4 slices of crispy bacon, chopped

1 Ripe Avocado, Destroyed

2 tablespoons finely chopped raw onion

Handful of fresh coriander leaves

1/4 cup Smoky Tomato Salsa (Buy in the store or Homemade)
- In a small bowl, crack the eggs and whisk with a tablespoon of water (or milk if you want creamy), a pinch of kosher salt, and a fresh black pepper. Warm the pan with enough butter or olive oil to lightly coat the bottom of the pan, and warm it up with medium low heat.
- Add the eggs to a frying pan and cook them, stirring them with a spatula, and then to your liking. Remove from the heat.
- Warm the corn tortillas in a dried frying pan or directly warm the gas flame until they are soft and slightly burnt.
- To assemble, spread the smashed avocado over each tortilla.
- A generous spoonful top of scrambled eggs, chopped bacon, fresh onion, coriander and smoky tomato salsa. Enjoy it warmly!
