The refrigerator is neatly lined with containers of roasted vegetables and grains. There’s soup ready to reheat when friends stop by, and something nourishing is waiting for you when you’re working late. It feels calm. Competent. considered.

And some weeks, dinner becomes a last-minute scramble and more “what works” sneaks onto the plate than expected.

So I decided to reset it. I wanted weeknight dinners to feel like a small pleasure again, rather than another chore. That’s when I finally got serious about these easy weeknight dinner recipes.
