“Winter squash” is a bit of a misnomer. In fact, these vegetables are in season from late summer to early fall. As the temperatures start to drop, I find myself looking for the best winter squash recipes and ways to use up all the beautiful harvest that’s piling up at the grocery store, market, and farmer’s market. Luckily for us, butter’s flavor makes it a great addition to soups, salads, and pasta, and it’s also the star of many of the meat-free entrees I eat throughout the season.
You probably already know about some of the vegetables that fall into this family.
