The heat and humidity in Texas is heavy, and my appetite for elaborate poolside gatherings is dwindling as the holidays are fast approaching as school holidays are coming closer. However, after starting a seasonal cooking journey, I learned that there are many beauty spots in the months after the peak of summer. At the end of summer, rewarding for the purposeful use of selected ingredients and simple recipes brings a more subtle kind of richness.

Tomatoes are at their juicy peaks, zucchini becomes an underrated hero ingredient, while stone fruits give every dish a tart sweetness that makes every dish feel a little more lively. End-of-summer recipes seek ingredients that take pride in their uncomplicatedness. First up is a recipe that celebrates this fleeting flavour.
