Who else is planning on spending as much time outside as possible this summer? Whether you set up a WFH office in your back pouch, bring your yoga mat to the park, or incorporate grills into your meals, I love finding ways to take advantage of nature.
It means that the grille not only brings me outside, but the guests are always welcome too. Instead of hiding in the kitchen, I’m part of a party, drinking chilled rosé and enjoying a good conversation. Needless to say, the heavenly scent of burnt food screaming summer. I’m not a grill expert (in fact, grilling most types of meat still scares me), but I I have it I found a simple outdoor grill recipe that will make me feel like a professional. Bake zucchini with chili mint vinaigrette
It’s this simple grilled zucchini that kicks off and grills our list with one of my favorite vegetables. I was able to eat this vegetable seriously in any form, but when served with a simple, flavorful vinaigrette from chef Valerie Rice, it’s hard to stop munching.
Grilled romaine salad with cherry and feta
Hot lettuce never sat with me…it sprinkled feta and Meyer lemon dressing until I tried this grill. The smoky flavor takes a typical salad to the next level.
Destroyed sweet potato wedges with Chimichurri
Fried sweet potatoes are my favorite side dish, and these wedges from Chimichurri are no exception. I love Kamille to lightly flatten the wedges on the grill, making them even more crisp and burnt. What’s more, this “shortcut” Chimichurri is definitely a recipe to preserve.

I recently tried Halloumi for the first time at ABA in Austin and I was completely impressed. This cheese appears to be rising, but is quick and easy to throw under a grill or broiler. Bonus points if you want to refill something from chili flakes to hot honey.
Grilled peach and asparagus salad with spicy pepitas from the cafe’s appreciation
This salad has several components, so Camille recommends you care about making them all or simplify the recipe according to your preferences and the time you want to give it. She also notes that the Goji Chipotle dressing is suitable for storing in the fridge all week. Take a look at the spicy pepitas she keeps in the freezer (you can even throw a handful of toasted pumpkin seeds).
Grilled mushrooms from Love U0026AMP. lemon
Mushrooms are an underrated vegetable for going to the grill. The best thing about these mushroom kebabs is that they allow this fantastic fungus to stay together while grooming other ingredients on the grill. What’s more, mushrooms are well combined with all kinds of proteins.
Grilled shrimp tacos with grapefruit avocado salsa
Considering the grilling of recipes in Texas, 90% of the time I’m thinking about what taco variations can be energized. After the shrimp are grilled and the tortillas are warmed (within an hour), add diced avocado and citrus salsa.
Caramel Onion and Prosciutto Pizza
Grilled pizza is at its moment. This recipe is the best way to jump on trends. Caramelized onions bring sweetness, while prosciutto bring saltiness. Each bite brings a balanced flavor that is difficult to hit.

When Kamille grills these for dinner, she usually makes twice the chicken she needs, so the next day you can add vegetables for lunch, recharge a corn tortilla on the stove and taste it again. The same about vegetables – she usually prepares them in advance and puts them in fridge containers to make sure the kids snack, saving the rest for these tacos.
Shrimp skewers
As far as simple outdoor grill recipes go, this is definitely the easiest. I love the gorgeous colours I add using vegetables, but I can use the protein and extra combinations I have on hand.
Honey grill peach and ice cream
I honestly have a grilled peach that was used to surprise me. Something about hot fruit didn’t sit with me, but this simple grill recipe changed my mind.
