Summer barbecue season is in full swing and so is the peak of the freshest produce, with much of it just starting to ripen.

Check out some of our favorite easy-to-make recipes from Pynck.com for outdoor barbecues and events. We’ve selected some of Taste of Home’s best summer sides for maximum flavor and ease, so you can enjoy plenty of them while the weather lasts. Mouthwatering ingredients for the five selected recipes are available by clicking the corresponding links.

Dolly Parton’s Coleslaw

This dish from the legendary singer and musician’s Tennessee Mountain Home Cooking collection is a standout side dish with a hint of Deep South flavor, with a touch of sugar and relish. It’s light on mayonnaise, with a touch of white vinegar and pickle juice added for balance. This quick and easy recipe is a perfect match for the family favorite USS Enterprise coleslaw recipe. This recipe calls for hundreds of crisp white cabbages, but with Dory’s recipe, you don’t have to feed the whole ship. Served with crispy tortillas, it’s the perfect summer side dish or a great appetizer. It’s based on the rustic black bean, a dish that’s become increasingly popular thanks to Spanish and Mexican influences. Fresh and nutritious, this colorful salad is a light snack for those hot summer days. Get the recipe here. https://www.tasteofhome.com/recipes/corn-and-black-bean-salad/

Lattice Corn Pie

Fresh corn is just starting to ripen this summer, and thanks to the Pennsylvania Dutch culture, this recipe was born. Is this corn and potato dish a main dish or a dessert? Actually, it’s both, and it’s easy to make it with store-bought pastry dough. Get the recipe here. Pennsylvania Dutch Corn Pie Recipe: How to Make It (tasteofhome.com)

Grilled Brussels sprouts skewers

Brussels sprouts? In the middle of summer? Fresh sprouts on a skewer on the barbecue are the best! These sprouts are tender and lightly browned to give them amazing flavor, and spices like red pepper flakes make them a great addition to your meal. You can easily adapt this recipe to bake in a hot skillet or in the oven on a rainy summer’s day. Just be sure to soak the wooden skewers in water before using.
