Winter recipe: French onion soup
For 4 people
245 calories per serving
1 tablespoon olive oil
25g butter
700g onion (5 medium onions), thinly sliced
3 cloves of finely chopped garlic
Vegetable stock 1.2 liters
2 tablespoons apple cider vinegar
sea ​​salt and black pepper
- Heat oil and butter in a large pot over high heat. Once melted, add onions and garlic. Saute for 5 minutes or until onions are browned.
- Reduce heat and simmer for 30 minutes, stirring occasionally. By then, the bottom of the pan should be coated with a rich nut-brown caramelized film.
- Add the stock and vinegar, stir well, scrape the bottom of the pot, and add the caramelized onions. Once it boils, reduce the heat and leave it for 1 hour. Season to taste before pouring into bowls.
